Infused with warming spices like cardamom, cinnamon, and cloves, this curry is rich, aromatic, and comforting. Best enjoyed with steamed rice or naan, itโs a dish that embodies the essence of Kashmiri culinary heritage.
Ingredients
- 1 kg mutton pieces (bone-in preferred)
- 2 onions, finely sliced
- 1 cup yogurt, whisked
- 2 tbsp Kashmiri red chilli powder
- 1 tsp turmeric powder
- 2 tsp fennel powder
- 1 tsp ginger powder
- 4 cloves garlic, minced
- 2 green cardamoms
- 2 black cardamoms
- 1 cinnamon stick
- 3 cloves
- 3 tbsp mustard oil or ghee
- Salt to taste
Method
- 1 Heat mustard oil or ghee in a heavy-bottomed pot until smoking, then cool slightly.
- 2 Add cardamoms, cinnamon, and cloves; sautรฉ until fragrant.
- 3 Add onions and cook until golden brown.
- 4 Stir in garlic, ginger powder, turmeric, fennel powder, and Kashmiri chilli powder.
- 5 Add mutton pieces and sear until browned.
- 6 Stir in whisked yogurt gradually, mixing well to avoid curdling.
- 7 Add 2 cups water, cover, and simmer on low heat for 45โ60 minutes until the
- 8 mutton is tender.
- 9 Adjust salt and serve hot with steamed rice or naan.
